A quick and easy meal to whip up at tea time

"Hi, I’m Jenny and I’m a mum of two boys who writes for the Bernard Matthews Family Panel. I decided to make a quick sweet chili turkey egg fried rice using some store cupboard ingredients. Not only is this meal quick and tasty but it is also cheap as the Bernard Matthews Sweet Chili Turkey Chunks are only £1 a pack! Booooootiful! The boys and I enjoyed demolishing this in more time than it took to cook!”

Sweet Chili Turkey and Egg Fried Rice Recipe


Ingredients:
  • 200g Bernard Matthews sweet chili Turkey Chunks
  • A drizzle of olive oil (I used a garlic infused one)
  • 2 large eggs, beaten
  • 250g pouch microwavable basmati rice, heated in the microwave
  • 1 onion thinly chopped
  • handful of frozen peas
  • dash of black pepper
  • Drizzle of Sweet chilli sauce (optional)

Method:
  1. Add the oil to a non-stick pan over a moderate heat
  2. Add the chopped onions and sauté for a few minutes, until they start to soften
  3. While the onions are cooking, crack your eggs into a bowl and beat with a fork and add some black pepper
  4. Add a handful of frozen peas and mix well
  5. Add the beaten eggs to the onions and peas, stirring all the time until scrambled and dry
  6. Add the rice and really mix well
  7. Then add the Bernard Matthews Sweet Chili Turkey Chunks and stir through for 3-4 minutes
  8. Remove from the heat as it is ready to serve

Prep time: 5 minutes

Cook time: 10 minutes

Serves: 2 adults or 1 adult and 2 children
