Serves 4
  • 280g (2, 140g packs) Roast Turkey Breast Pieces
  • 250g pack cooked quinoa
  • 1 small red onion, diced
  • 1 small red pepper, diced
  • 2 diced tomatoes
  • 1 small sweet potato, diced and blanched
  • 1 tbsp Low Fat French dressing
  • 1 large avocado
  • 2 little gem lettuces, washed
  • First, empty the quinoa into a large bowl, and fork to remove any clusters.
  • Combine the quinoa, onion, pepper, tomatoes, and diced sweet potatoes with the dressing and stir through.
  • Now, peel, de-stone and dice the avocado and mix with the Roast Turkey Breast Pieces.
  • Tear the little gem leaves and divide between bowls – spoon over the quinoa mix, then top with Roast Turkey Breast Pieces and avocado slices.

You can cook the quinoa yourself; we suggest cooking in chicken stock as opposed to just boiling water.
