Turkey Satay Sandwich Recipe

  • 100g Bernard Matthews Honey Roast Turkey Breast Slices
  • 1 tbsp peanut butter
  • ½ tsp chilli powder
  • 1 tsp lemon juice
  • 1 tbsp dark soy sauce
  • 4 tbsp coconut milk
  • 4 pitta breads
  • Lettuce, shredded
  • Cucumber slices
  • Tomato slices
Method
Method
  1. Make the sauce by mixing the peanut butter, chilli, lemon juice and soy sauce in a pan, over a low heat.
  2. Stir in the coconut milk and heat gently until smooth.
  3. Lightly toast the pitta breads and fill with lettuce, cucumber and tomato.
  4. Cut the turkey breast slices into strips and add these to the satay sauce. Heat through and spoon into the prepared pitta breads. Serve immediately.
