Turkey meatloaf

Serves 4
  • 450g Turkey thigh mince
  • 2 tbsp olive oil
  • 60ml BBQ ketchup sauce
  • 1 small onion, sliced and fried until almost crispy
  • 3 slices bread, bread crumbed
  • 200g butternut squash or pumpkin, diced
  • 40g pumpkin seeds
  • 1 red pepper, finely diced
  • 1 green chilli, deseeded & finely diced (optional)
  • Seasoning
  • Place all ingredients in a large bowl and bind together until they are evenly mixed
  • Pour the mixture into a lined bread tin (recommend 2.5lb tin), pressing down to fill the corners
  • Place in an oven pre-heated to 200°C (180ºc Fan) for approximately 1hr 15 mins
  • Cover with foil half way through cooking time
