Turkey Ham, Spinach and Tomato Omelette Recipe

Perfect for lunch!

This turkey omelette recipe is a great spin on a classic omelette dish.

Serves 1-2
  • 170g Bernard Matthews Wafer Thin Turkey Ham, cut into strips
  • 50g spinach blanched and drained
  • 1 chopped tomato
  • 2 spring onions sliced
  • 4 eggs
  • A little milk
  • 25g butter
  • Pepper
  1. Beat the egg with a little milk.
  2. Melt ½ of the butter in an omelette pan pour ½ of the egg mixture into the pan cook over a gentle heat.
  3. When the egg has set turn the omelette and top with ½ the Turkey Ham, spinach, tomato and spring onions.
  4. When the topping has been heated through serve immediately and repeat the process with the remaining ingredients for the second omelette.
