Turkey Ham Scones Recipe

Baked to perfection

This turkey recipe is great for snacks and light lunches.

  • 85g Bernard Matthews Wafer Thin Turkey Ham, chopped into small pieces
  • 16 Bernard Matthews Wafer Thin Turkey Ham strips, to garnish
  • 225g self raising flour
  • 1tsp baking powder
  • Salt and pepper
  • 50g margarine
  • ½ tsp dried oregano
  • 1 courgette, grated
  • 1 egg, beaten
  • 2 - 3 tbsp milk
  • 200g soft cheese
  1. Heat oven to 200°C/400°F/Gas Mark 6.
  2. Mix flour with baking powder, a pinch of salt and pepper. Rub in margarine and stir in the oregano, turkey ham and courgette.
  3. Stir in the egg and enough milk to make a soft, but not sticky dough. Knead lightly on a floured surface and roll out to about 2cm thick. Cut into 6.5 cm rounds.
  4. Brush the tops with milk and bake for 10 - 12 mins until risen and golden brown.
  5. Allow to cool. Cut each scone in half. Top generously with soft cheese and a twisted strip of turkey ham.
