Turkey Ham Rice Surprise Recipe

A yummy surprise

This turkey recipe is a lovely filling meal.

Serves 6
  • 400g Bernard Matthews Wafer Thin Turkey Ham
  • 1tbsp olive oil
  • 1 onion, finely diced
  • 250g risotto rice
  • 2 stock cubes with 750ml hot water
  • 175g peas
  • 25g unsalted butter
  • Fresh Parmesan cheese, grated
  • Optional: flat leaf parsley
  • Optional: 50g sugar snap peas
  1. Heat the oil in a large heavy-based pan and fry the onion over a low heat until softened. Add the rice and fry for 2 - 3 mins. Carefully stir in a little stock, cover and simmer. Each time the rice has absorbed the stock add some more. Stir well, cover and continue to cook for 18 mins.
  2. Try a little of the rice to make sure that it is cooked to your liking. Add the peas and cook for 2mins, add the turkey ham and sugar snap peas and cook for a further 2mins, adding a little stock if needed. Stir in the butter and spoon onto plates and serve with Parmesan and plenty of black pepper.
  3. Garnish with flat leaf parsley if liked.
