Turkey Ham and Leek Triangles Recipe

Crusty pastry and succulent ham

This turkey recipe can be served hot or cold and is perfect for packed lunch boxes or a hot weekend lunch.

Serves 6
  • 200g Bernard Matthews Wafer Thin Turkey Ham, cut into strips
  • 450g packet of ready rolled shortcrust pastry sheets, thawed
  • 50g butter
  • 1 large leek, washed and finely sliced
  • 15ml plain flour
  • 150 ml of single cream or milk
  • 100g Cheddar cheese, grated
  • Salt and pepper
  • 1 beaten egg to glaze
  1. Pre-heat oven to 200ºc/400ºF/Gas Mark 6
  2. Cut each pastry sheet into six equal squares
  3. Melt the butter in a pan and gently fry the leek until tender. Stir in the flour and gradually add the cream or milk stirring continuously
  4. Add the turkey ham and cheese to the mixture, season to taste and cool
  5. Divide the cooled filling between the six pieces of pastry, placing the filling on one side, but leaving the edges of the pastry free. Brush the pastry edges lightly with beaten egg and fold over to cover the filling
  6. Press the edges firmly together and make a small hole in the top of each pastry
  7. Brush the triangles with the remaining egg
  8. Place on a baking sheet and bake for 18 – 20 minutes until golden brown
  9. Serve hot or cold
