Turkey Ham & Jacket Potato Recipe

Bootiful and saucy lunchtime treat

This turkey ham recipe is an indulgent way to enjoy a jacket potato.

Serves 2
  • 100g Bernard Matthews Wafer Thin Turkey Ham cut into strips
  • 2 large baking potatoes
  • 4 tbsp Hollandaise sauce or melted butter
  • 1 bunch of chives, snipped
  • 1 curly leaf lettuce, washed
  • 2 large tomatoes, sliced

Hollandaise sauce
  • 100g unsalted butter, melted
  • 2 large egg yolks
  • Salt and pepper
  • Juice of 1 lemon
  • Optional: tarragon, chopped
  1. Bake the potatoes in an oven at 200°C/400°F/Gas Mark 6 for about one hour until soft. Split and open.
  2. To make the sauce whisk the egg yolks and place in a double saucepan with hot, but not boiling, water in the base.
  3. Add the melted butter very slowly whilst whisking the eggs until the mixture is quite thick.
  4. Add lemon juice, salt and pepper to taste.
  5. Stir in the tarragon and serve warm. Using an electric whisk will speed up the process.
  6. Fill with the Turkey Breast strips, drizzle over the Hollandaise sauce and top with the chives.
  7. Garnish with lettuce and tomatoes to serve.
