A warming and delightful turkey recipe, this goulash feeds 2 and is very simple to make

Serves 2
  • 200g Bernard Matthews Roast Turkey Breast Pieces
  • 1 tbsp oil
  • 1/2 onion, chopped
  • 25g flour
  • 1/2 tsp paprika
  • Pinch cayenne pepper
  • 1/2 can chopped tomatoes
  • 425ml chicken stock
  • 125g carrot, chopped
  • 125g potatoes, diced
  • 1/2 green pepper, chopped
  • 50g tomato puree
  • 125ml yoghurt
  • Seasoning
  1. Fry the onion in oil until softened. Stir in the flour, paprika and cayenne pepper.
  2. Stir in chopped tomatoes and chicken stock. Add the rest of the vegetables, tomato puree and seasoning. Bring to the boil, reduce heat and simmer for 40 minutes.
  3. Add Roast Turkey Breast Pieces and allow to heat through for a few minutes. Stir in the yoghurt before serving.
