  • 140g (1 pack) Roast Turkey Breast Pieces
  • 2 flour tortillas
  • 100g grated Light mozzarella (or torn buffalo mozzarella)
  • 1 small jar passata
  • 50g fresh spinach
  • 2 free range eggs
  • Optional
  • 1 tbsp garlic oil – to taste
  • 1 tbsp black olives
  • Lay the two Tortillas onto a pizza tray, one per tray.
  • Spread the passata over each tortilla pushing right to the edges. If the passata is too runny, add a squeeze of tomato puree to thicken.
  • Smother the tortillas with the mozzarella, then cover with the spinach and Roast Turkey pieces, saving the eggs until last – aim for the center.
  • Cook in a pre-heated oven at 200c for about 8 - 10 minutes, or until the outside has gone slightly crispy and the cheese has melted.
  • Transfer to a warmed plate, and slice four times with a pizza cutter, into eight pieces letting the egg yolk ooze.
  • Drizzle with garlic infused olive oil if you wish.
