Turkey Boulders Recipe

  • 100g Bernard Matthews Turkey breast slices
  • 2 slices stale bread
  • 1.2kg potatoes
  • 85g sage and onion stuffing mix
  • 1 bunch spring onions, trimmed and sliced
  • 1 egg, beaten
  1. Preheat oven to 190°C/375°F/Gas Mark 5. Put bread slices directly onto the oven shelf and bake until golden. Make up ¾ pack stuffing mix according to instructions using proportionally less water.
  2. Boil the potatoes for 18 - 20 mins. Drain and mash without adding any milk or butter.
  3. Stir the mashed potatoes, sage and onion stuffing, turkey slices cut into strips, spring onions and egg together. Form mixture into 6 patties.
  4. Take the bread out of the oven and crush to crumbs stir in the reserved dry stuffing mix and put onto a plate. Roll the turkey boulders through the crumbs to coat. Place onto a non-stick baking sheet and bake for 20 mins. Serve hot with vegetables and cranberry sauce or ketchup.
