Turkey and Broccoli Quiche Recipe

The perfect party food

This turkey quiche recipe is a great dish to prepare for picnics and weekday bites.

Serves 3-4
  • 140g leftover christmas turkey (cooked)
  • 1 x 9-inch pastry case
  • ½ tbsp sunflower oil
  • 2 tbsp finely chopped onion
  • 150g chopped fresh broccoli
  • 100g shredded Gruyere or Swiss cheese
  • 3 eggs
  • 200ml single cream
  • 1 tsp curry powder
  • ½ tsp salt
  1. Preheat oven to 220°C/425°F/Gas Mark 6.
  2. Heat the oil in a frying pan over a medium heat and fry the onion for 2-3 minutes until tender. Remove from heat.
  3. Boil the broccoli for approx. 5 minutes until tender and then drain.
  4. Stand the pastry case on a baking tray and place the broccoli, onion, cooked leftover turkey and cheese into the pastry case.
  5. In a medium bowl, beat the eggs, cream, curry powder and salt together.
  6. Pour this egg mixture over the turkey and broccoli in the pastry case.
  7. Bake in the oven for about 20 minutes, or until the egg mixture has set and is firm to the touch.

Very tasty and very very easy to make!

Make sure you buy high sided savoury pastry cases though (more than a couple of centimetres at least), otherwise you'll have too much filling from the ingredient quantities listed for just one quiche.

Also, using the pre-marinated tikka (or chilli) turkey chunks seemed to work very well.
A definite 5 stars, and it won't be long before I try another recipe from the website.
