Serves 3-4
  • 4 Turkey breast steaks (thick cut)
  • 1 packet of filo pastry*
  • Olive oil
  • Mixed seeds
  • 100g Stilton cheese
  • 50g cream cheese
  • 1 tbsp dried apricots, diced
  • 1 tbsp dried cranberries

* 1 sheet of pastry needed for each parcel trimmed to the size of the turkey steak
  • Make the filling combining the stilton, cream cheese and adding the cranberries & apricots
  • Brush olive oil on one side of the Filo pastry and divide into squares
  • Divide the pastry into four, layering it at a slightly different angle than the layer below, using three to four squares for each parcel
  • Place a turkey steak and a 1/4 of the filling onto the middle of the Filo square
  • Bring the corners of the pastry together and twist
  • Brush the parcels with the rest of the olive oil and sprinkle with mixed seeds
  • Bake on a greased baking tray in an oven pre-heated to 200°C (180°C Fan) for approximately 20 minutes.
