  • 200g pack of Bernard Matthews Wafer Thin Turkey Ham
  • 2 tbsp olive oil
  • 400g already cooked new potatoes, sliced
  • 4 eggs, beaten
  • 4 finely chopped spring onions
  • 50g grated cheddar cheese
  • 50g frozen peas
  • Handful of spinach
  • Handful chopped parsley (optional)
  1. Heat the oil in a non-stick frying pan. Add the cooked potatoes and fry until they are beginning to crisp.
  2. Whisk together the eggs and spring onions in a bowl and season to taste with salt and pepper. Add the peas, spinach and Wafer Thin Turkey Ham to the bowl. Preheat the grill.
  3. Tip the ingredients in the bowl into the frying pan with the potatoes and mix together quickly.
  4. Lower the heat and then sprinkle over the cheddar cheese. After roughly 8 mins, once the top of your frittata is has almost set, pop the frying pan under the grill for 2-3 mins or until firm and golden. Slide it out of the pan and cut up into 8 pieces like a pizza then serve.
