This turkey recipe is simple, spicy and full of turkey.

  • 200g Bernard Matthews Turkey Breast Slices, cut into strips
  • 3 sticks celery, thinly sliced
  • ½ cucumber, thinly sliced
  • 2 spring onions, thinly sliced
  • 3 tbsp parsley, chopped
  • Almonds or cashew nuts to serve


  • 1 inch fresh ginger root, peeled and grated
  • 3 tbsp olive oil
  • 1 tbsp white wine vinegar
  • 1 tbsp clear honey
  • ½ tsp ground cinnamon
  • Salt and pepper
  1. Wash and dry the spinach.
  2. Toss together the salad ingredients and turkey strips in a large bowl.
  3. Place all dressing ingredients in a screw-top jar and shake well.
  4. Pour dressing over salad just prior to serving and scatter a few nuts over the salad if desired.
  5. Serve with crusty French stick.
