Red Thai Turkey Recipe (Serves 2)

  • 100-200g (1-2 packs) Sweet Chilli Turkey Breast Pieces
  • 1/2 tbsp oil
  • 1/2 onion, finely diced
  • 1 garlic clove
  • 1/2 tbsp grated ginger
  • 1/2 red pepper, cut into wedges
  • 1-2 tbsp red Thai paste
  • 150ml coconut milk
  • 125g fine beans
  • 1/2 bunch fresh coriander

Method
Method
  1. Heat oil in a pan, and fry the onions, garlic and ginger
  2. Reduce the heat to medium and add the peppers and Thai paste, stirring occasionally
  3. Add the coconut milk, turn heat up to boil, then reduce to simmer for 5-10 minutes
  4. Add the fine beans and cook for a further 5 minutes, or until tender
  5. Check taste, and adjust if needed – the sauce can be thickened with a little cornflour mixed with cold water.
  6. Fold in the Sweet Chilli Turkey Breast Pieces, so they are all coated in sauce and allow to heat through
  7. Stir in the chopped coriander
  8. Serve with rice, or fine rice noodles
