Serves 4
  • 300g (3, 100g packs) Roast Turkey Breast Pieces
  • 1 tbsp oil
  • 1 onion, chopped
  • 1/2 pack bacon lardons (100g)
  • 125ml red wine (optional)
  • 1 clove garlic, crushed
  • 300g chestnut mushrooms, quartered
  • 1, 400g tin of chopped tomatoes
  • 2 tbsp tomato puree
  • 1 tbsp chopped flat leaf parsley
  • Heat the oil in a pan.
  • Add the onion and bacon lardons and fry until soft.
  • Add the crushed garlic, and mushrooms (and red wine if using).
  • When the mushrooms start to soften, add tinned tomatoes and paste.
  • Reduce heat and cook until combined.
  • Add Roast Turkey Breast Pieces and heat through.
  • Stir in the chopped parsley.
  • Serve with fluffy rice, or cooked baby potatoes.
