Lemon and pesto gnocchi with turkey

This turkey recipe is a very quick, cheap and easy weeknight supper.

Serves 4
  • 2 x 500g packets fresh gnocchi
  • 2 handfuls frozen peas
  • 1 lemon, zest
  • 4 tbsp pesto
  • Knob of butter
  • 2 handfuls leftover christmas turkey,, shredded
  • Freshly grated Parmesan
  1. Bring a large pan of salted water to the boil, then add the gnocchi and frozen peas and stir. Allow to simmer until the gnocchi rises to the surface.
  2. Drain then return to the pan and add the lemon zest, pesto, butter and shredded turkey meat. Toss to thoroughly combine and then serve into bowls with plenty of freshly grated Parmesan.
