Leftover Turkey Hoisin Sauce Wraps

Serves 4
  • 8 wheat tortillas wraps
  • 350g leftover christmas turkey (cooked)
  • 8 tablespoons hoisin sauce
  • 6 tablespoons water
  • 6-8 spring onions, topped and tailed and sliced
  • Whole cucumber, peeled and cut into batons
  • Couple of handfuls of salad leaves (optional)
  1. Warm the tortillas in the microwave or the oven and cover with a clean damp tea towel to keep them warm while you prepare the leftover turkey filling.
  2. Place the leftover turkey in a frying pan along with the hoisin sauce and water. Slowly bring to the boil and reduce the heat to a simmer. Cook for around 5 minutes stirring frequently until the leftover turkey is coated with a sticky brown sauce that has reduced.
  3. Evenly distribute the hoisin turkey onto the warm wraps followed by the spring onions, cucumber and salad if using. Roll up the wraps tightly, slice each in half and serve immediately.
