Diced turkey with chorizo and chickpeas

One-pot meal can be made in advance.

Serves 4
  • 400g Diced turkey fillets
  • 2tbsp olive oil
  • 1 onion, sliced
  • 1 clove garlic, sliced
  • 2 carrots, peeled and sliced
  • 1 stalk celery, sliced
  • 1 red chilli, deseeded and chopped
  • 1tsp smoked paprika
  • Splash of red wine
  • 1 x 400g can chopped tomatoes
  • 200ml of stock
  • 200g chorizo, sliced
  • 400g can Chickpeas, drained
  • Seasoning
  • Chopped parsley
  • In a saucepan, heat the oil then add the onions, garlic, carrots, celery and chilli. Cook for 5 minutes then add the diced turkey thigh and sear
  • Add the paprika, red wine and the chopped tomatoes
  • Then add the stock and bring to the boil
  • In a separate pan, fry the chorizo for 2-3 minutes then drain the oil and add to the main saucepan
  • Reduce the heat and cook for approximately 2 hours, seasoning to taste. If necessary thicken with a little corn flour and water
  • Add chickpeas 5 minutes before end of cooking and heat through
  • To serve, sprinkle with chopped parsley.

I was advised to add more Turkey to my diet to increase protein intake. So I found this recipe and I have to say I am very impressed it is nothing short of delicious!
