<center><img src="http://www.bernardmatthews.com/shares/fajita.jpg" alt="" width="400"/></center><h3>Ingredients</h3><ul class="pbullet"><li>100g BBQ Hickory Turkey Breast Pieces</li><li>1/2 tbsp olive oil</li><li>1/2 large onion, sliced</li><li>1/2 green pepper, sliced</li><li>1/2 lime</li><li>Fresh coriander ( optional ) </li><li>4 flour tortillas</li><li>Salsa – 100g tomatoes, 1/2 small onion, 1 mild chilli, 1/2 bunch coriander, lime juice, salt, 1/2 tsp water</li><li>Guacamole – 1/2 ripe avocado, 1/2 diced tomato, lemon juice, dash Tabasco, 1/2 small onion, fresh coriander</li><li>Cheddar Cheese – 100g, grated</li><li>Garlic Mayonnaise – 100ml mayonnaise, 1/2 spring onion, 1-2 cloves peeled garlic, 1/2 tbsp horseradish sauce</li><li>Beans (optional) – use about 35g of three of your favourites, 1/2 tsp tomato puree, 1/2 tbsp water and 1/2 tbsp barbecue sauce</li></ul><br/><h3>Method</h3><ol class="pbullet"><li>For the salsa; simply chop all the ingredients into a small dice, and combine with the water and lime juice</li><li>For the guacamole; chop half the avocado and blend the other ‘til smooth. Gently mix together with the lemon juice, and fold in the diced tomato and onion. Season with the Tabasco and chopped coriander</li><li>For the garlic mayonnaise; blitz the garlic, horseradish and mayonnaise in a blender, then stir in the finely shredded spring onions</li><li>For the beans; mix tomato puree, water and bbq sauce together, and then mix the beans through until completely coated</li><li>Heat 1tbsp oil in a griddle pan and brand the BBQ Hickory Turkey Breast Pieces on each side. Place on a plate and keep warm.</li><li>Add the remaining tbsp of oil to the pan and fry the onion and pepper briskly in a very hot pan for about 4 minutes, until cooked but still slightly crunchy</li><li>Mix the branded BBQ Hickory Turkey Breast Chunks with the peppers and onions.</li><li>Heat the tortillas for 30 seconds in a microwave, spread some salsa over each tortilla, divide the turkey, onion and pepper mixture between the tortillas. Squeeze lime over the top and sprinkle with grated cheese. </li><li>Roll the tortillas to enclose the filling. </li><li>Serve immediately with the salsa, Guacamole and beans.</li></ol>
