No-Bread Lunch

Ditch the carbs and enjoy a filling lunch to keep the hunger and calories at bay!

It can be hard to find a filling and nutritious lunch that’s also carb free. Challenge yourself with making a no-bread lunch that would still fill up a hungry eater! The Bernard Matthews Wafer Thin Turkey Ham, is great for a lovely lunchtime to satisfy those taste buds and goes bootifully with the sweetness of peppers, cucumber and tomato for a vegetable packed dish.

The No-Bread Lunch shopping list:


  • Bernard Matthews Wafer Thin Turkey Ham
  • ½ a cucumber
  • ½ pack of instant Couscous
  • 1 red pepper
  • Handful of salad leaves
  • 10 Cherry tomatoes


Stuffed Pepper Method
  1. Cut the top off the pepper and remove seeds/contents to provide a hollow shell to fill
  2. Boil kettle and follow instructions on the couscous packet
  3. Cut the turkey chunks in the small pieces and mix with couscous (once complete)
  4. Add the turkey and couscous mix into the pepper and serve.


Cucumber Baguette Method
  1. Slice your cucumber portion in half lengthways
  2. Add Bernard Matthews wafer thin turkey ham, salad and tomato as filler
