What’s essential with making quick, light lunches is planning ahead – make sure you make a good list, shop efficiently and plan your lunches for the week.

Here are our Top 5 Lunch Shortcuts – a helpful tip for every weekday:

Freeze ahead
If you’re looking for variety at lunchtimes and sometimes something more than just a sandwich, one of the best things to do is use your freezer to prep ahead. Keep individual portions of crushed garlic, vegetable stock or chopped herbs in ice cubes. This will last ages in the freezer and can be used straight from frozen into your wok or saucepan the next time you need it. Our Bernard Matthews cooked meats range can also be frozen for using at different times!

Cupboard staples
Make sure your cupboard is stocked with some handy quick ingredients including: baked beans, stir-fry sauce, tomato sauce or tinned tomatoes with herbs, butter beans and stock cubes.

Fridge staples
Always have to hand some weekly fridge staples: eggs, Wafer Thin Turkey Ham, your favourite salad ingredients, some yoghurt and cheese.

Pick a fast carb
Bread is the obvious choice - we recommend two choices such as bagels or pittas and sliced bread. Other carbs that cook quickly are couscous, pouches of microwavable rice and pre-cooked stir fry noodles. For a quick and delicious lunch, try adding to couscous some Roast Turkey Breast Pieces, chopped avocado, a dollop of hummus and some carrot sticks.

Make the most of leftovers
Either get into the habit of making extra at tea time and saving either a full portion for your lunch, or putting to one side a serving of rice or pasta for you to use in other ways the next day.
